Spinach Potato Soup
This soup is easy to make and warms the soul on a cold, blustery day. The whole family will love it.
This soup is easy to make and warms the soul on a cold, blustery day. The whole family will love it.
Ingredients: 1 leek washed and sliced thin (dark green stem and root trimmed away) 3 medium to large baking potatoes peeled and cut into chunks 1 tablespoon Earth Balance or olive oil or butter. 5 cups "No Chicken" broth or regular chicken broth. Avoid vegetable broths that are tomato in color. 4-5 cups fresh baby spinach (stems trimmed) 1 teaspoon salt 1/8 teaspoon of freshly ground pepper (optional) |
Directions:
1. Saute sliced leek in oil for 5-7 minutes.
2. Add potatoes and only 4 cups of the broth. Bring to a boil then lower heat and cook covered for 15 minutes or until potato is cooked through.
3. Pour into a blender and puree just until smooth. You will have to do this in two batches. Pour soup back into pot.
4. Add spinach and last cup of broth. Cook over low heat until spinach is cooked through (about 5 minutes).
5. Add salt and pepper.
Serve with warm rye or multigrain rolls.
