Ingredients:
1 piece whole wheat Naan bread 1 medium tomato, coarsely chopped 1 ounce cheese, grated (mozzarella or pepper jack) Handful of baby kale or watercress 2 tablespoons basil vinaigrette |
Directions:
1. Turn broiler on high. Place oven rack about 5 inches below broiler. 2.. Line a baking sheet with foil and place the Naan bread face down. It will take about 4-5 minutes for the Naan bread to evenly toast. Watch carefully so it doesn't burn. 3. Remove the Naan bread and turn over. Place tomatoes evenly over the top and sprinkle with the grated cheese. 4. Place back under the broiler until cheese has melted (about 1 minute). 5. Remove the Naan bread and transfer to a plate. Place your greens on top and drizzle with basil vinaigrette. Cut in half and eat! Notes: I keep my Naan bread in the freezer and place it under the broiler while it is still frozen. You can make your own basil vinaigrette or buy it already made. This is a versatile recipe - feel free to improvise any way you want. |
