Curried Pumpkin Soup Serves 4
Ingredients: 3/4 cup chopped Spanish onion 2 teaspoons olive oil 2 1/2 teaspoons curry powder 4 cups sodium-reduced, nonfat chicken or vegetable broth 1 (15-ounce) can pumpkin 2 Idaho potatoes, peeled and cut into 1-inch cubes 1/4 cup chopped fresh cilantro Toasted pumpkin seeds for garnish (optional) Salt & pepper to taste 4 whole grain rolls Directions In a large saucepan, saute onion in oil 2 minutes. Add seasonings; stir to coat. Add broth, pumpkin, and potatoes, and bring to a boil. Reduce heat to medium, partially cover and cook 8-10 minutes, until potatoes are tender. Remove from heat and stir in cilantro. serve with rolls. Therapeutic Use of Pumpkin Pumpkin has a cooling nature and can be used to treat "damp" conditions such as eczema and edema. It helps regulate blood sugar and benefits the pancreas - it is used for diabetes and hypoglycemia. It promotes discharge of mucus from the lungs, bronchi, and throat.
